Ingredients 1-8 for the crust. Beat the butter; add sugar and flours. I use a food processor to do this quickly. Press dough into a 8 x 8 inch pan lined with parchment paper. Bake 10-12 minutes at 350ºF.
Blend together all remaining ingredients except the nuts and cranberries with a mixer. Sprinkle cranberries on top of the cooked crust and then pour the batter on top. Sprinkle with 1/3 cup pistachios. Bake 40-45 minutes.
Cool well before cutting into squares. Drizzle with orange frosting if desired.
Frosting (optional): powdered sugar thinned with orange juice.
