We've been making these cookies forever. I don't remember where the recipe comes from....
Prepare a cookie sheet with parchment paper.
Melt the butter in a saucepan. Add sugar, molasses and the egg and mix well. In a separate bowl, mix the flour, flax seed, and baking soda, and spices and then add to the wet ingredients. Chill until firm.
Put the coarse sugar into a small bowl. Using a small ice cream scoop or with your fingers, create small balls of dough and then roll them in the coarse sugar. Put them on cookie sheet and flatten slightly.
Bake 8 minutes at 375 degrees. It is okay if they are soft when you remove them from oven.
NOTE: It's always a good idea to test one cookie first to determine if you are happy with the size of the cookies - and its firmness, etc. before creating balls with all of the dough.
