The perfect "purple" salad with the region's Concord specialty.
Ingredients
  • 4 tsps Concord grape jam or concentrate
  • 3 tbsps apple cider vinegar
  • 3 tbsps olive oil
  • 1 small shallot, finely diced
  • salt & pepper to taste
  • 5 ozs arugula (about 8 cups)
  • 3 cups purple cabbage (thinly sliced/chopped)
  • 1 cup halved red grapes or blueberries
  • 1/2 cup toasted walnuts
  • 3 ozs feta or goat cheese, crumbled
Directions

Mix well all of the ingredients for vinaigrette in a jar and shake well:  grape jam/juice, vinegar, oil, shallot, and salt and pepper.

Rinse and drain well the arugula and place on a plate. Mix the cabbage and grapes and put on top of arugula. Sprinkle walnuts and cheese on top and drizzle with the vinaigrette.
